Vegan Summer Fruitcake + Settling Into 2020

Ingredients
  

  • 3 pounds mixed fruit, chopped I used peaches, strawberries, and cherries
  • 1 batch vanilla cake batter from my white cake recipe, link below

Instructions
 

  • Preheat the oven to 350 degrees. Coat a 9x12 cake pan with butter or coconut oil, set aside.
  • Prepare the fruit, and layer it in the bottom of the pan, no more than 2 layers of fruit.
  • Prepare the cake batter according to the directions below, and pour the batter over the fruit.
  • Bake for 25 minutes, then turn the pan, and back a final 15-20 minutes, watching the edges to make sure they don't overly cook.
  • Let cool completely. Then turn upside down, allow the cake to fall out of the pan, slice, and enjoy!

Notes

The batter I used for this cake is from my white cake recipe.
