Ingredients
  

For the Avocado Salad

  • 2 large avocados
  • 2 c. quinoa, cooked
  • 1 15 oz. can black beans, drained
  • 1 red bell pepper, seeded and diced
  • 1 jalapeno, seeded (if desired) and diced

For the Dressing

  • 1 c. cashews, soaked for 1-2 hours
  • 1 c. cilantro
  • 1 lime, juiced
  • 1 tsp. salt
  • 1/2 c. water

Instructions
 

  • Pour water over the cashews and soak for at least 1-2 hours; rinse and drain.
  • Make the salad: cook the quinoa and combine with the black beans, bell pepper, and jalapeño in a medium sized bowl.
  • Make the dressing: place the cashews, water, lime juice, and cilantro in a high powered blender, and blend until smooth.
  • Slice the avocados in half and remove the pits and skin. Plate the avocado halves, topping with the quinoa and then the cilantro dressing.
  • Dressing and quinoa will keep separately in the fridge for 3 days.
