Black Bean Dip for the Win

Ingredients
  

  • 1 c. cashews, soaked
  • 2 14 oz. cans black beans, drained and rinsed
  • 2 cloves garlic
  • 1/2 tsp. chili powder
  • 1 tsp. salt
  • 1 lime juiced
  • 1 jalapeno, deseeded, if desired

Instructions
 

  • Boil water, and soak your cashews for a few minutes (see notes).
  • In a large food processor, process the garlic. Add all other ingredients along with 3/4 c. water, and process for about a minute. Taste, adjust spices as needed, and enjoy.

Notes

OK here's the deal with cashews: I used to soak them for 1-2 hours, then I got lazy and started boiling water and soaking them for about 20 minutes, and these days I'm even lazier. I boil the water in my electric tea pot, pour it over the cashews, wait a few minutes, drain, rinse, and put them in the processor or blender. I honestly don't even think they need to be soaked at all, but I'm still doing it, albeit for a few minutes. I think pretty soon I'll be omitting this pre-soak step altogether.
