Cherry Cobbler Chicks

Ingredients
  

  • 1/3 cup coconut oil
  • 1/3 cup pecans
  • 1/3 cup walnuts
  • 1/3 cup almonds
  • 1 cup rolled oats
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup brown sugar
  • 2 pounds cherries
  • 6 ounces blackberries

Instructions
 

  • Heat your oven to 375 degrees.
  • Melt the coconut oil, set aside.
  • In a food processor, process the nuts until coarse. Add the oats, cinnamon, salt, sugar, and oil, and process until combined.
  • Pit the cherries.
  • In a pie dish, place the cherries and the blackberries. Spoon the crumble on top.
  • Bake, uncovered, for about 20 minutes, then turn the pie dish so it cooks evenly, and continue baking for about 15 more minutes, until bubbly.
  • Serve with your favorite vegan vanilla ice cream.
