Costa Rica Tacos, and Yoga

Ingredients
  

  • 2 cloves garlic
  • 1 onion, white
  • 1/2 head cauliflower
  • 4 tomatoes
  • 1 zucchini squash
  • 1.5 tsp. cumin
  • 1/2 tsp. paprika
  • 1/2 tsp. chili powder
  • 1 c. hummus
  • 4 tortillas

Instructions
 

  • Mince the garlic and dice the onion, and cook in a large frying pan over medium heat for ten minutes. Half way through, add the cumin, paprika and chili powder, and stir.
  • Dice the cauliflower, tomatoes and squash, and add to the onion mixture, cooking for an additional 15 minutes, stirring often.
  • Heat the tortillas on both sides for a few minutes in a frying pan over high heat.
  • Spread the hummus on each tortilla and top with the veggie mixture.

Notes

You can use store bought hummus or make your own. I always make my own, and usually follow the recipe from the Oh She Glows cookbook.
