Mince the garlic and dice the onion, and cook in a large frying pan over medium heat for ten minutes. Half way through, add the cumin, paprika and chili powder, and stir.
Dice the cauliflower, tomatoes and squash, and add to the onion mixture, cooking for an additional 15 minutes, stirring often.
Heat the tortillas on both sides for a few minutes in a frying pan over high heat.
Spread the hummus on each tortilla and top with the veggie mixture.

You can use store bought hummus or make your own. I always make my own, and usually follow the recipe from the Oh She Glows cookbook.
