In a large bowl, combine the peanut butter and maple syrup. Add the rice cereal, and stir well.
In a small pan, melt the chocolate chips and coconut oil, stirring often. Remove from heat.
Place a sheet of parchment paper onto a serving dish.
Pour about 1/2 cup of water into a small bowl. Dip your fingers into the water, then form the peanut rice mixture into balls. Using a spoon, roll the balls into the chocolate mixture.
Plate the balls onto the prepared dish. Sprinkle each ball with salt.
Place the balls into the freezer for 10 minutes. Remove, sprinkle the remainder of the melted chocolate on top, if desired, and return to the freezer for 5-10 minutes.
Enjoy immediately or place in the fridge. Balls will last about 3 days.
