Ingredients
  

  • 1 c. cashews, raw
  • 1 c. boiling water
  • 2 jalapenos, deseeded and chopped
  • 1 tbsp. lemon, juiced
  • 1 tsp. apple cider vinegar
  • 1 tsp. salt

Instructions
 

  • In a Vitamix or high-powered blender, combine all ingredients and blend on high until smooth. Enjoy immediately, or the queso will last for a few days in the fridge if you have more willpower than me.
