Restoring with White Chocolate Pecan Cookies

Ingredients
  

  • 2 tbsp. flax seeds, ground
  • 1 c. vegan butter, softened
  • 1 c. brown sugar
  • 1/4 c. natural cane sugar
  • 2 and 1/2 c. all-purpose flour
  • 3/4 c. rolled oats
  • 2 tsp. vanilla extract
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 2 tsp. almond milk
  • 2 c. white chocolate chips
  • 1 c. chopped pecans

Instructions
 

  • Heat the oven to 350 degrees.
  • In a small bowl, combine the flax with 6 tbsp. warm water, and set aside.
  • In a large mixing bowl, beat the butter with the flax. Then mix in both sugars.
  • Slowly, about 1/2 c. at a time, add the flour to the butter mixture. Then add in the oats, baking soda, vanilla, salt, and almond milk, mixing well.
  • Fold in the white chocolate chips and the pecans.
  • Form the batter into 1" balls and place on prepared baking sheets.
  • Bake for 17-19 minutes until edges are golden brown.

Notes

I ordered the vegan white chocolate chips online but I bet they are sold in some natural food stores.
