Cook the rice according to package directions, and set aside.
In a large frying pan, cook the onion, garlic, chili powder, cumin and black pepper for 5 minutes, stirring often to avoid sticking.
Add the pumpkin and red bell pepper, and cook for 15 minutes, until pumpkin is soft.
Meanwhile, heat the black beans in a small saucepan on medium low heat for about 8 minutes.
Remove the veggies from heat, and stir in the lime juice.
Make the guac: mash the avocado with the lime juice and black pepper.
Fill the bowls with rice, veggies, black beans and guac, and enjoy!
