Ingredients
  

  • 1 and 1/2 c. cashews, soaked in hot water
  • 1 red onion, diced
  • 3 cloves garlic, minced
  • 2 yellow bell peppers, diced
  • 4 carrots, peeled and diced
  • 3 celery stalks, diced
  • 1 c. quinoa, uncooked
  • 88 oz. vegetable broth
  • 2 tsp. thyme
  • 2 tsp. sage
  • 1 tsp. red pepper flakes
  • 3 15 oz. cans white beans (I used northern beans)

Instructions
 

  • In a large stockpot, cook the onions and garlic for 5 minutes. Add in the other veggies for 5 minutes. Then add in the quinoa, broth, beans, and spices. Bring to a boil, then simmer for 30 minutes.
  • Drain the cashews and blend with 1 and 1/5 c. water.
  • Add the cashews into the soup, stirring well.
  • Serve immediately with your favorite cornbread!
