I don’t have much more to say than the words above so far this month. April’s brought a lot of destruction and tragedy beyond words to many of the people I love, and for that, I want it to go away.
When life doesn’t make sense and when I can’t wrap my head around things, I bake. When life is good, I bake, too. It’s what I turn to under stress, and under tears, and under laughter: my common ground; the place where I can contemplate and enjoy silence.
These rice balls take 6 ingredients and come together in less than 30 minutes. I buy the Barbara’s brand of rice cereal from Sprouts.

Cruelest April Rice Crispie Balls
Ingredients
- 1/2 c. peanut butter
- 3 tbsp. maple syrup
- 1 c. puffed rice cereal
- 1/2 c. dark chocolate chips
- 1 tbsp. coconut oil
- salt
Instructions
- In a large bowl, combine the peanut butter and maple syrup. Add the rice cereal, and stir well.
- In a small pan, melt the chocolate chips and coconut oil, stirring often. Remove from heat.
- Place a sheet of parchment paper onto a serving dish.
- Pour about 1/2 cup of water into a small bowl. Dip your fingers into the water, then form the peanut rice mixture into balls. Using a spoon, roll the balls into the chocolate mixture.
- Plate the balls onto the prepared dish. Sprinkle each ball with salt.
- Place the balls into the freezer for 10 minutes. Remove, sprinkle the remainder of the melted chocolate on top, if desired, and return to the freezer for 5-10 minutes.
- Enjoy immediately or place in the fridge. Balls will last about 3 days.
