Pumpkin Black Bean Bowl

This has got to be one of the healthiest recipes on this blog; it’s a go-to for fall and winter evenings, filled with pumpkins, red bell pepper, black beans, and whatever veggies you have on hand. This is a delicious winter vegan bowl!

Ingredients
  

For the Bowl

  • 1 c. rice
  • 1 2-3 lb. pumpkin, peeled and chopped
  • 1 red bell pepper, chopped
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1/8 tsp. black pepper
  • 1 lime, juiced
  • 1 15 oz. can black beans, rinsed and drained

For the Guacamole

  • 1 avocado, peeled and pitted
  • 1 lime, juiced
  • 1/8 tsp. black pepper

Instructions
 

  • Cook the rice according to package directions, and set aside.
  • In a large frying pan, cook the onion, garlic, chili powder, cumin and black pepper for 5 minutes, stirring often to avoid sticking.
  • Add the pumpkin and red bell pepper, and cook for 15 minutes, until pumpkin is soft.
  • Meanwhile, heat the black beans in a small saucepan on medium low heat for about 8 minutes.
  • Remove the veggies from heat, and stir in the lime juice.
  • Make the guac: mash the avocado with the lime juice and black pepper.
  • Fill the bowls with rice, veggies, black beans and guac, and enjoy!
