This has got to be one of the healthiest recipes on this blog; it’s a go-to for fall and winter evenings, filled with pumpkins, red bell pepper, black beans, and whatever veggies you have on hand. This is a delicious winter vegan bowl!
Vegan Pumpkin Nutrient Bowl
Ingredients
For the Bowl
- 1 c. rice
- 1 2-3 lb. pumpkin, peeled and chopped
- 1 red bell pepper, chopped
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 1 tsp. chili powder
- 1 tsp. cumin
- 1/8 tsp. black pepper
- 1 lime, juiced
- 1 15 oz. can black beans, rinsed and drained
For the Guacamole
- 1 avocado, peeled and pitted
- 1 lime, juiced
- 1/8 tsp. black pepper
Instructions
- Cook the rice according to package directions, and set aside.
- In a large frying pan, cook the onion, garlic, chili powder, cumin and black pepper for 5 minutes, stirring often to avoid sticking.
- Add the pumpkin and red bell pepper, and cook for 15 minutes, until pumpkin is soft.
- Meanwhile, heat the black beans in a small saucepan on medium low heat for about 8 minutes.
- Remove the veggies from heat, and stir in the lime juice.
- Make the guac: mash the avocado with the lime juice and black pepper.
- Fill the bowls with rice, veggies, black beans and guac, and enjoy!
