Hi, friends! I almost didn’t post this vegan cashew sour cream recipe because it’s not really a recipe. It’s 2 ingredients, not including the water. However, I often suffer from acid reflux, and you might, too. So if you make vegan cashew sour cream, AKA cashew crema, every week like me, you might want an alternative that omits the acids: lemon juice and apple cider vinegar. It could just be me, but those 2 ingredients don’t add that much to this dip. They’re absolutely worth removing if acid reflux is something you suffer from. In fact, acid reflux is something I almost never experience anymore. That’s the power of eating right for you and your body, and that’s where this “recipe” comes in.

Why do I make this vegan cashew sour cream every week? Actually, at least twice a week? Well, it makes EVERYTHING taste better: tacos, salads, wraps, chips, baked potatoes, veggie burgers, veggie bowls… you name it. It’s my go-to topping for literally everything I make. In fact, I rarely serve a home-made meal without my vegan cashew sour cream these days. Mainly, I’ve been in a bit of a work rut taking over my free time, and also, I still want to eat kinda healthy at home, so need a lot of really quick options to do so. This is one of those “recipes” that you don’t even need to think twice about. That’s my kinda recipe right now.

So this vegan cashew sour cream goes really, really well with every bowl and taco on this site, especially my all-time favorite bowl of brussels sprouts, sweet potatoes, and carrots. It just makes everything creamy and delicious. Even for all of you that don’t enjoy veggies, you will now enjoy them, I promise! This vegan cashew sour cream goes with literally everything, and makes everything yummier. And there’s literally no way you can say you don’t have time. This does not even take 5 minutes! You have the time.


So, how are all of you? Summer is pretty much here, but it’s been lovely in Santa Fe, just the perfect weather, perfect views, perfect sunrises and sunsets… this city just knows how to make you fall in love with it. I’ve been lucky enough to live in some pretty incredible cities, and there’s simply nothing like Santa Fe. My days are a lot longer, and fuller, and more stressful these days with work responsibilities, but I still have time every day to soak this place in, take my dogs on a long walk, and simply be grateful for the beauty around me. Long walks with mountain views have a way of picking up spirits; maybe everyone could use a bit of this peace to help pick our country back up from the depths of despair. We all need it. I hope you find something in your day to bring you this kind of peace.

As for me, I’m continuing to be grateful, continuing to cook as much as I can (and truly continuing to enjoy this vegan cashew sour cream), continuing to go see live music as much as possible, to read (just finished this one and loved it!), to walk, to simply enjoy life as much as I can. I know life is filled with seasons, good and bad, and it’s important to enjoy the good ones…. we all know they don’t always last, and taking a moment to be grateful is absolutely essential. May you find the things that bring you joy and do them as much as you can, and have as many good days as humanly possible.

The Easiest Vegan Cashew Sour Cream (Seriously)

Ingredients
  

  • 1 cup cashews, raw
  • 1 cup boiling water
  • 1 teaspoon salt

Instructions
 

  • Combine all ingredients in a high-powered blender. Let sit for 5-10 minutes so the cashews get soft.* Blend on high until creamy, which typically takes less than a minute. Enjoy immediately!

Notes

Just a few things:ย 
I don’t always have time to let the cashews sit. They’ll just not be as creamy if you’re also in a rush. No biggie, they still taste great.ย 
I use a Vitamix and really, really suggest you do, too. I’ve tried other blenders and none are as powerful that I’ve found. Creamy vegan sour cream comes from a high-powered blender, such as a Vitamix.ย 
As noted in this blog post, this is the easiest recipe and it’s for all you out there with acid reflux. Meaning, we’re skipping what cooks usually put in here: lemon juice and apple cider vinegar. I actually don’t miss either and never include them anymore, even on my non-acid reflux days.ย
