Here’s my latest and my favorite, a simple vegan tofu sandwich. We cannot get enough of this. Give it a try, it’s quick and perfect for lunch or with a salad for dinner.

Vegan Spicy and 'Cheesy' Tofu Sandwich
Ingredients
- 16 oz. extra firm tofu
- 3 tbsp. nutritional yeast
- 3 tbsp. olive oil
- 1/2 tsp. garlic powder
- 1/4 tsp. salt
- 1/8 tsp. pepper
Toppings, Choose From:
- Vegan Sour Cream
- Sliced Avocado
- Thinly Sliced Tomato
- Spinach or Salad Toppings
- sriracha This is a must. And pile it on!
Instructions
- Drain the tofu and put in a tofu press or under your heaviest books (wrapped in several towels first if using books) and press for at least 20 minutes.
- Slice the tofu into thin strips. In a large, shallow bowl, combine the olive oil, yeast, garlic powder, salt and pepper, and then dip the tofu in the oil blend, covering each side.
- Heat a large skillet over medium high heat, and top with the tofu. Cook each side about 4 minutes until golden.
- Toast your bread, add the toppings you prefer, don't forget to add sriracha! And enjoy as either an open faced sammy or regular sandwich.
